Hrous or hrouss is a Tunisian culinary specialty which is prepared with peppers (or chili peppers) according to different recipes. There are two main forms of hrous:
1. **Simple crushed chili paste:** This version consists of a paste made with fresh crushed chili peppers. Chili peppers are usually crushed or crushed to form a sort of spicy puree.
2. **Hrous specific to the Gabès region:** This particular variant of the hrous comes from the Gabès region in Tunisia. It is prepared by mixing equal parts peppers and onions marinated in salt. The women of the region prepare this preparation during a period called la oula. The oula is a Tunisian tradition where women come together to carry out culinary preparations or other tasks as a group, often in the run-up to special events or harvest seasons. To make hrous de Gabès, peppers and onions are often finely chopped and mixed with salt. This mixture is then left to marinate for a period of time, allowing the flavors to develop and the vegetables to soak up the salt. The hrous thus prepared can be used as a condiment to spice up dishes, providing a characteristic spicy and salty flavor. Hrous is therefore a tasty and spicy preparation which adds a touch of heat and flavor to the dishes of Tunisian cuisine, particularly in the Gabès region.
